Ella Calderón

Chef, Long Beach

Disposable Magazine x Urban Outfitters

Ella Calderón is a private chef from Long Beach, California. She enjoys making people happy with food and tends to end up helping others in the kitchen. Being a private chef has helped her explore new food and techniques of cooking. She grew up watching her mother and grandmother cook, and she has mastered both of their recipes to her favorite dish: Sopa de Albondigas. She avidly seeks new markets to source ingredients, from farmers' markets or small specialty stores. When cooking, she take inspiration from the weather, her mood, the time of year, nature, and her guests.

Have you always wanted to be a chef?

I always hoped to be. I have always been interested in the kitchen and being able to serve a meal to people. I loved watching my mom growing up. Today, anyone's house we go to.. I end up in the kitchen helping or taking over. Being a private chef gives me the freedom to make what I want and explore new things all the time. Making people happy with the food I’ve made makes everything worth it.

As a chef, where do you grocery shop?

Mostly farmers markets, or smaller specialty markets. I like to search for new ones as well. Pacific Ranch Market in Orange, Ca is one of my favorites. I guess it just depends what I’m making and where I will find certain ingredients.

When cooking what inspires you the most?

Lots of things inspire me, nature, my surroundings, the time of year, the occasion, the weather, my mood, who I’m hosting. I’m always looking what to make next.
